Cucumber Tomato Salad

I brought this salad to my monthly scrapbooking event. The women loved it and asked for the recipe. I love this salad because it can be made in about 10 minutes, it tastes even better the next day, it can be made throughout the year, and the dressing can be used in tomato, cucumber, or lettuce salads.

Ingredients:
Cucumber        1
Tomato         1
Dried Onion        ~ 1 Tbls        
Olive Oil    1-2 Tbls
Red Wine Vinegar    1/8-1/4 cup
Salt & Pepper    to taste
Garlic Powder    ½ tsp

Wash and slice cucumber and tomato and put into a bowl. Add remaining ingredients, stir to mix, and refrigerate for at least 30 minutes. Remember, the longer it sits in the dressing, the better the flavor.
