My Mom’s Green Beans

Last year something kept eating my green beans. This year I have a bountiful crop and I only planted two short rows. My kids aren’t green bean eaters typically but they will eat these!
(Again, I don’t have exact measurements, so you’ll have to do some experimenting.)

Fresh Green Beans    (I do about 1 handful per person and then throw in a few extra)
Butter            Tablespoon or so
Onion            ½-- give or take, depending on amount of people        

Summer Savory    1 teaspoon (Try to use the savory with just the leaves, which is harder to find. Most of the varieties I’ve found contain stalks as well, which you have to pick out. They won’t harm you—just not the best mouth-feel experience. Spice Islands brand makes both varieties.)  

Wash and cut stems from the beans. Place ½ inch of water or so in bottom of pot. I usually insert a steamer into my pot, and add the beans to the steamer insert. If you don’t have a steamer insert, just add the beans to the water. Cover and bring to a boil. Turn to low setting and steam for 10-12 minutes, depending on desired firmness.

While beans are cooking, add butter to small fry pan to melt. While butter is melting, peel and chop onion and add to melting butter. Cook onion to golden brown. Add Summer Savory and stir. Once beans are cooked, pour out water and add onion mixture to beans. Stir and serve immediately.
